Today is PNW day, which is the acronym for Pacific Northwest. This region is well known for the extraordinary quality of fish and seafood, especially Oysters and Salmon.
This is because it is located in the far north of the United States and very close to Alaska and that is why the clear and cold waters here are perfect for the growth of these animals, including the visit of Orcas in some seasons.
Oysters need clear water as they absorb everything in the water and this directly affects their taste. Therefore, cleaner waters make them taste fresh and salty, like seawater.
Some of the oysters here, like Kumamoto, can take three to four years to grow completely and are considered a delicacy.
